Are you a fan of the pumpkin spice craze that occurs this time of year? Once fall comes around, the stores start lining their shelves with pumpkin spice products and the internet abounds with pumpkin recipes. Personally, I’m still a fan of pumpkin spice because I love this time of year. Since I moved to South Florida, I definitely miss the change of seasons (but not the brutal winters!). It’s just not the same drinking a pumpkin spice latte in 80 degree weather. But even if I can’t have the fall weather, I can still enjoy the wonderful autumn flavors.
When I received a sample of Nature’s Path Pumpkin Flax Granola, I got really excited to try it out in a delicious fall recipe. I have to admit it was hard to resist eating this granola by the handful- it’s that good! In addition to being delicious, it’s enriched with pumpkin and flaxseeds to offer an impressive 450 mg of omega-3 fatty acids per ¾ cup serving. And as with all of Nature’s Path products, it’s USDA Certified Organic and Non-GMO Project Verified.
In addition to the granola, I also received a sample of Qi’a Cranberry Almond Cereal, a cereal that incorporates vanilla-infused cranberries, sliced almond, and superfoods like chia, hemp and buckwheat. It’s an excellent source of omega-3 fatty acids and a good source of fiber. This product is great in a smoothie bowl or parfait with vanilla yogurt and fresh fruit.
My 4 Ingredient Pumpkin Spice Yogurt Parfaits are perfect for breakfast or even dessert. The combination of creamy yogurt and crunchy granola is classic and the addition of pumpkin and warm spices takes it to another level. Plus, with only 4 ingredients, they’re a cinch to make. I simply mix Stonyfield vanilla yogurt with canned pumpkin and pumpkin pie spice and then layer it with Nature’s Path pumpkin flax granola. You can use Stonyfield Vanilla Greek Yogurt or Stonyfield Smooth & Creamy French Vanilla (using Greek yogurt will give you twice the amount of protein). This dish also passed the Sienna test, which means that my 2-year-old daughter loved it!
4 Ingredient Pumpkin Spice Yogurt Parfaits

- 1 cup Stonyfield Nonfat Vanilla Greek Yogurt or Smooth & Creamy Lowfat or Nonfat French Vanilla Yogurt
- ¼ cup canned 100% pure pumpkin
- ¼ teaspoon pumpkin pie spice (or combination of cinnamon, nutmeg and ginger)
- ¼ cup Nature’s Path Pumpkin Flax Granola
- Mix the yogurt, pumpkin and pumpkin pie spice together in a bowl until smooth. Spoon half of the yogurt mixture into a parfait bowl or glass. Sprinkle 2 tablespoons granola on top. Repeat with another layer of yogurt and granola. Dive in!
