Air Fryer Mexican Street Corn
You can enjoy this corn on the cob straight from the air fryer slathered with a little butter, salt, and pepper. Or you can kick it up a notch and make my version of air fryer Mexican street corn.
Mexican street corn, also known as elote, is a beloved Mexican dish. It's made with grilled corn on the cob slathered in a creamy sauce made from mayonnaise or Mexican crema, and sprinkled with cotija cheese, a salty and crumbly cheese. It's typically seasoned with chili powder or paprika and garnished with lime juice for a tangy kick.
This delectable air fryer corn on the cob recipe is my lightened up take on this iconic Mexican snack. Instead of slathering the corn with mayonnaise, I drizzle it with a luscious sauce infused with spices and fresh lime juice. Then I top it all off with crumbled cotija cheese and bright cilantro.
The combination of the slightly charred, sweet corn with the creamy sauce, spices, salty cheese, tangy lime juice, and fresh cilantro is out of this world!

- Corn- use fresh, sweet corn on the cob
- Sour cream- you can use regular sour cream or Mexican crema
- Mayonnaise- forms the base of the sauce along with sour cream
- Lime juice- I stir fresh lime juice into the sauce and also serve lime wedges on the side for squeezing on top
- Spices- I use chili powder and garlic powder; you can add a little cayenne pepper for heat if you want
- Cheese- I top the corn with crumbled cotija cheese, a Mexican cheese; you can substitute feta if you can't find it
How To Make Corn on the Cob In The Air Fryer Step-By-Step

- Step 1- Lightly spray corn with a little avocado or olive oil and season with salt. Place corn in a single layer in the basket of your air fryer that's been preheated to 375°F.
- Step 2- Cook until corn is tender and lightly charred, turning it once or twice, about 12-15 minutes.
- Step 3- Stir sour cream, mayonnaise, lime juice, chili powder, and garlic powder together in a small bowl.
- Step 4- Drizzle the sauce on top of the corn. Sprinkle cheese on top and garnish with cilantro and lime, if desired.
Chef's Tips
- Preheat the air fryer for best results.

- Don't overcrowd the air fryer basket. You may need to cook the corn in batches or cut the cobs in half depending on the size of your air fryer
- Turn the corn cobs halfway through so that they cook evenly on all sides.

- You can cook frozen corn on the cob the same way. Either defrost it first or cook it for a few extra minutes if cooking from frozen.

- 1 tablespoon sour cream
- 1 tablespoon mayonnaise
- 1 tablespoon fresh lime juice

Instructions
