- Milk- you can use any kind of milk in this overnight oats recipe including dairy milk or dairy-free milk like almond milk, oat milk or soy milk
- Yogurt- use plain or vanilla Greek yogurt to add a creamy texture and a boost of extra protein and probiotics; you can substitute vegan yogurt like coconut milk yogurt for a vegan option (along with non-dairy milk); you can also substitute cottage cheese

How To Make Blueberry Overnight Oats Step-By Step

- Step 1- To make the blueberry compote, simmer the blueberries, lemon juice, and maple syrup in a saucepan until the berries soften and burst and release their juices. Remove from heat and cool.
- Step 2- Meanwhile, stir the milk, yogurt, maple syrup, lemon zest, and vanilla together in a large bowl.
- Step 3- Stir in the oats and chia seeds.
- Step 4- Layer the oat mixture and the blueberry compote in four small containers like mason jars, overnight oats containers or Tupperware. Cover containers with a lid or plastic wrap and place in the refrigerator overnight (or at least 4 hours). In the morning, add your favorite toppings and dive in!

Easy Blueberry Overnight Oats

- 2 cups blueberries
- 2 ½ tablespoons maple syrup or honey
- 1 tablespoon lemon juice plus 2 teaspoons lemon zest
- 2 cups milk, any type (I use almond milk)
- 1 cup 2% plain Greek yogurt
- 1 teaspoon vanilla extract
- 2 cups old fashioned oats (can use gluten-free certified oats)
- 4 teaspoons chia seeds
Optional toppings:
- Fresh blueberries, chopped nuts, seeds, coconut flakes, nut butter
Instructions
- To make the blueberry compote, heat the blueberries, maple syrup, and lemon juice together in a small saucepan over medium heat. Simmer several minutes, stirring occasionally, until the blueberries start to burst and release their juices. Remove from heat and cool.
- Stir the milk, yogurt, vanilla, and lemon zest together in a large bowl until smooth. Add the oats and chia seeds and stir to combine well.
- To assemble the overnight oats, spoon about ¼ cup of the oat mixture into each of 4 mason jars or cups. Top each with about 2 tablespoons of the blueberry compote. Repeat with another layer of oats and compote.
- Cover the containers with a plastic wrap or a lid and place them in the refrigerator overnight (or at least 4 hours).
- Before serving, stir the overnight oats and add a splash of milk if needed to loosen it up. Add any additional toppings and enjoy!
