What is Mahi Mahi?
Mahi mahi, also known as dolphinfish or dorado, is a type of white fish that thrives in subtropical waters like the Atlantic Ocean and the Gulf of Mexico.
It has a firm, meaty texture with large flakes. Mahi mahi has a delicate flavor and is an excellent choice if you're looking for a milder tasting fish.
Because of its firm texture, mahi mahi is an excellent fish for grilling. It won't fall apart on the grill like other delicate white fish. It's a popular choice for fish tacos like my blackened mahi mahi tacos recipe.
With its mild flavor, it pairs beautifully with fresh herbs, lemon juice, and olive oil, which add a burst of flavor. It's also delicious topped with fruit salsas like my mango salsa or strawberry jalapeño salsa. Because of its mild flavor, it's a great fish to serve to children.

- Mahi Mahi: You can use fresh or frozen fish fillets; be sure to defrost frozen fish fully and pat it dry before cooking.
- Oil: I like to use heart healthy olive oil or avocado oil.
- Spices: I use a combination of kosher salt, black pepper, garlic powder, onion powder, paprika, and cumin. You can substitute other spices like lemon pepper, thyme, chili powder, Italian seasoning or cayenne pepper for a bit of heat. You can also try my homemade salmon dry rub.

How To Make Grilled Mahi Mahi Step-By-Step

- Preheat your grill to medium-high heat and brush the grill grates with oil. Pat the mahi mahi fillets dry with a paper towel and brush them with olive oil.
- Mix the dried spices together in a small bowl. Sprinkle the spice mix on the fillets.
- Place fish on the hot grill- you can use an outdoor grill or a grill pan on the stove. Cook for 3-4 minutes until grill marks form and the fish easily releases from the grill. Flip and cook another 3-4 minutes, or until the fish flakes easily with a fork.
- Remove the Mahi Mahi from the grill and squeeze fresh lemon juice on top. If desired, top with mango salsa.
