Step 1: Cook onion in a skillet in olive oil. Add garlic and corn and cook until softened.

Step 2: Add chili powder, cumin, smoked paprika, salt, and pepper.

Step 3: Add the Neufchâtel cheese, sour cream, and lime juice, and stir until melted and creamy.

Step 4: Top with grated cotija cheese, fresh cilantro, and more corn.

Step 5: Serve in the skillet or transfer the elote dip to a serving bowl. Enjoy with tortilla chips.
