What you'll need:

Eggs Sweet Potatoes Avocado Tortillas Shredded cheese Olive oil Onion Garlic Chili powder Salt Milk Cilantro Lime juice

Step 1: Make the sweet potato hash by sautéing onions, sweet potatoes, garlic and chili powder in a pan.

Step 2: Whisk eggs with milk and salt. Cook the eggs in a pan until soft curds form.

Step 3: Mash the avocado in a bowl with lime juice, cilantro and salt.

Step 4: Place all the ingredients on a tortilla and top with some shredded cheese.

Step 5: Fold the edges of the tortilla in and roll the burrito up.

Step 6: Serve with hot sauce, salsa or sour cream, if desired. Burritos can be frozen for 3 months.
