What you'll need:

Flour Chia seeds Sugar Baking soda Baking powder Salt Egg  Lemon-flavored yogurt Lemon juice + zest Vanilla Oil

Step 1: Mix the dry ingredients together in a large bowl.

Step 2: Mix the wet ingredients together in another bowl.

Step 3: Stir the wet ingredients into the dry ingredients until just combined.

Step 4: Scoop the batter into a muffin pan, filling the wells 3/4 full. You can use a regular or mini muffin pan.

Step 5: Bake at 350°F for 12-15 minutes (mini muffins) or 18-22 minutes (regular muffins).

Step 6: If desired, drizzle some lemon yogurt glaze on top of the muffins. Enjoy!
