Grilled Avocados Stuffed with Corn & Black Bean Salsa

Grilled avocados are the perfect vehicle for serving up a delicious corn and black bean salsa in this easy and nutritious vegetarian dish.

Corn & Black Bean Salsa:

  • 1 cup fresh or thawed frozen corn (I grilled fresh corn on the cob and cut the kernels off)
  • 1 cup no-salt added black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1/3 cup diced red onion
  • 1 ½ tablespoons minced jalapeno pepper
  • 2 tablespoons lime juice
  • ¼ cup chopped cilantro
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cumin

Avocado Cilantro Yogurt Sauce:

  • ½ avocado, peeled and pitted
  • ½ cup low fat plain Greek yogurt
  • 2 tablespoons cilantro
  • 1 tablespoon lime juice
  • 1/8 teaspoon kosher salt
  • ¼ teaspoon hot sauce like Sriracha (optional)

Grilled Avocados:

  • 2 medium to large avocados, halved and pits removed
  • 1 teaspoon olive oil
  • Kosher salt


  1. Combine all of the salsa ingredients in a medium bowl. Let sit at room temperature for about 30 minutes for flavors to meld together.
  2. To make the sauce, puree the avocado, yogurt, cilantro, lime juice, salt, and hot sauce together in a mini food processor or blender.
  3. Heat a grill or grill pan to medium high heat. Brush avocado halves with oil and sprinkle with a pinch of salt. When grill is hot, place avocado halves cut side down on the grill and cook 2-3 minutes until nice grill marks form. Remove from heat.
  4. Fill avocados with some corn and black bean salsa. Drizzle some Avocado Cilantro Yogurt Sauce on top and garnish with cilantro.
  5. Serve extra salsa and sauce on the side. You can also mix the extra salsa with cooked quinoa for a tasty second dish!
