Mediterranean Couscous

Featuring healthy Mediterranean ingredients, this dish is the perfect accompaniment to my Olive and Sundried Tomato Crusted Fish.

Ingredients

  • 1 cup whole wheat pearl (Israeli) couscous
  • 2 tablespoons olive and sundried tomato spread (see recipe above)
  • 1 ½ cup chopped baby spinach
  • ¼ cup pitted black olives, chopped
  • Salt and pepper, to taste

Instructions

  • Cook the couscous in a medium saucepan according to package directions. Stir in the olive and sundried tomato spread, spinach and olives. Cover and remove the saucepan from the heat. Let rest for a few minutes until spinach is wilted. Season with salt and pepper to taste.
