  1. Refrigerate the can of coconut milk overnight. Open the can and scoop out the solid part that has risen to the top.  Place it in a bowl and add the vanilla and sugar. 

  2. Using an electric mixer, whip until fluffy.  Serve with Blueberry Granita.
