Chipotle Corn Salsa (Copycat Recipe)

Chipotle shared this recipe on their TikTok account so now you can enjoy your favorite restaurant salsa at home! This Chipotle Corn Salsa uses sweet summer corn and is so easy to make with only 6 ingredients! And you can make it in under 30 minutes. Enjoy this zesty salsa with chips or add it to tacos, burritos, salads, and more!

  • 2 cups corn kernels (fresh, frozen or canned)
  • ¼ cup chopped red onion
  • ¼ cup chopped cilantro
  • 2 tablespoons chopped jalapeño pepper
  • 2 tablespoons fresh lime juice (or you can use a mixture of half lime juice and half lemon juice)
  • ½ teaspoon Kosher salt
  • Optional ingredient: ½ roasted poblano pepper (see Recipe Notes section)

Instructions

  • If using fresh corn on the cob, first grill the corn on a grill or grill pan. Turn the corn occasionally, cooking until lightly charred on all sides, about 10 minutes. Remove corn from the grill and let it cool. Then, cut the kernels off the cobs. I like to do this by placing a small bowl upside down inside a larger bowl. Then I prop the corn cob on top of the small bowl and cut the kernels off with a knife. The corn kernels fall right into the larger bowl.
  • If you are using frozen corn, you can skip the grilling step and heat up the corn according to package directions. If using canned corn, drain and rinse the corn.
  • Place the corn in a large bowl and add a generous pinch of salt. Let it rest while you prep the other ingredients.
  • Mix the chopped onion, jalapeño, cilantro, and lime juice (or lemon lime juice combo) together in another bowl. Then, add the mixture to the corn. Taste the salsa and adjust salt as needed.
  • Let salsa sit at least 30 minutes before serving.

Notes

I love using fresh corn in the summertime however you can make this recipe all year round with frozen or canned corn too. The Chipotle website says they use white sweet corn however you can use white or yellow corn. 
Jalapeño peppers give this salsa a medium spice level. Although the Chipotle TikTok video shows only jalapeño peppers being used, the Chipotle website also lists poblano peppers as an ingredient. If you want a bit of smoky flavor, you can also add half a roasted poblano pepper to this recipe. To roast a poblano pepper, char it on all sides over a direct flame on a gas stove until the skin is blackened. Then place the pepper in a plastic bag- this will help loosen the skin. Then, gently peel off the skin and chop the pepper. If you don't have a gas stove, you can char the peppers in the oven under the broiler.  
The TikTok video just mentions lime juice, however, the Chipotle website lists both lemon and lime juice as ingredients. You can just do one or use a combination of the two- either way will be delicious!
You can store leftover salsa in an airtight container in the refrigerator for up to 5 days.
