Blueberry Eyeball Smoothie Bowl

These Blueberry Eyeball Smoothie Bowls are made with just 3 nutritious ingredients and topped with lychee "eyeballs."

Ingredients

  • 2 cups fresh or frozen blueberries plus 4 blueberries for eyeballs
  • 1 banana frozen
  • ⅓-1/2 cup apple juice
  • 4 lychees drained (from a can)

Instructions

  • Puree the blueberries, banana and apple juice together in a blender until smooth. Add more apple juice as needed to get a thick consistency.
  • To make the eyeballs, place one blueberry in the center of each lychee.
  • Pour the blueberry smoothie into two bowls and top each bowl with two eyeballs.

Notes

Canned lychees can be found in the Asian food section of many grocery stores. If you can’t find them, you can substitute honeydew melon.
