Sautéed Summer Corn

My Sautéed Summer Corn is the perfect accompaniment to the burgers and features sweet corn, a summer favorite.

  • 2 teaspoons olive oil
  • 2 cloves garlic, minced
  • 4 ears corn, kernels cut off
  • ¼ cup chopped roasted red peppers, drained
  • 1/8 teaspoon ground cumin
  • 1 tablespoon chopped cilantro
  • Salt and pepper


  1. Heat the oil in a large skillet over medium heat. Add the garlic and cook 30 seconds until fragrant. Add the corn and cook, stirring occasionally, until cooked but still crunchy, about 6-8 minutes. Stir in the peppers, cumin and cilantro and cook another minute or two until all the ingredients are heated through. Season with salt and pepper to taste.
