Quinoa Vegetable stock Red onion Zucchini Bell peppers Carrots Garlic Thyme Olive oil  Salt & Pepper Balsamic vinegar Dijon mustard

Step 1: Toss vegetables with olive oil, thyme, salt & pepper and roast 30-35 minutes at 425°F.


Step 2: Cook the quinoa in a saucepan with vegetable stock. 


Step 3: Whisk olive oil, balsamic vinegar and Dijon mustard together to make the dressing. 


Step 4: Toss quinoa, roasted vegetables and balsamic dressing together.
