Olive oil Pancetta Onions Carrots Celery Garlic Rosemary Crushed tomatoes Chicken or vegetable broth Parmesan cheese Cannelini beans Ditalini pasta Salt & pepper

Step 1: Cook the pancetta in olive oil in a Dutch oven until browned.

Step 2: Add onion, carrots and celery and cook until softened.  Add garlic and rosemary.

Step 3: Add crushed tomatoes, a parmesan rind, broth, and water. Bring to a simmer.

Step 4: Mash some cannelini beans with some broth in a bowl.

Step 5: Add the mashed beans and whole beans to the pot. Simmer the soup for 10-15 minutes.

Step 6: Add the pasta, cover the pot, and cook 10-12 minutes until al dente.

Step 7: Taste and adjust seasoning with salt and pepper.

Step 8: Ladle soup into bowls and top with grated parmesan cheese and olive oil. Serve with crusty bread for dipping.
