Olive oil Butter Onions Sugar Garlic Flour Thyme Bay leaf White wine Beef broth Cognac (optional) Baguette Gruyere cheese Salt & pepper

Step 1: Heat oil and butter in a large soup pot and add the sliced onions.  Season with salt, pepper and sugar.

Step 2: Cook, stirring occasionally, until onions are golden brown and caramelized, about 45 minutes.

Step 3: Add the garlic, thyme, and bay leaf.  Add the flour and cook 1-2 minutes.

Step 4: Pour in the white wine. Cook until almost all of the liquid has evaporated and onions are jammy.

Step 5: Add the beef broth. Bring to a boil and reduce to a simmer. Simmer the soup for 30 minutes.

Step 6: Meanwhile, toast bread cubes on a baking sheet in the oven at 400°F for 7-8 minutes .

Step 7: Pour the soup into bowls and top with toasted bread. Sprinkle gruyere cheese on top.

Step 8: Place under the broiler for a few minutes until cheese is melted and bubbly. Cool for a few minutes, then dive in!
