Step 1: Put eggs, cottage cheese, salt, and pepper in a bowl.

Step 2: Whisk them together until smooth.

Step 3: Add them to a nonstick skillet sprayed with olive oil and cook over medium-low heat.

Step 4: Push eggs towards the center of the skillet with a spatula until soft and creamy.

Step 5: Transfer to a plate and garnish with herbs, if desired. Serve with your favorite sides.
