Step 1: Slice zucchini in half and scoop out the flesh with a melon baller or spoon.


Step 2: Bake zucchini for 15 minutes at 375°F until partially softened.


Step 3: Cook the onion, ground meat, zucchini flesh, and marinara sauce in a skillet.


Step 4: Spoon the filling into the zucchini boats.


Step 5: Top with a mixture of mozzarella and parmesan cheese. 


Step 6: Bake 15-20 minutes until zucchini is cooked through and cheese is melted.
