Oil Onion Garlic Ginger Thai red curry paste Chili flakes Red lentils Crushed tomatoes Fish sauce Coconut milk Lime juice Brown sugar Salt and pepper

Step 1: Sauté onion, garlic, ginger, red curry paste and chili flakes.

Step 2: Stir in the red lentils.

Step 3: Add tomatoes, fish sauce and water and simmer 20 minutes. Stir in coconut milk, lime juice and brown sugar.

Step 4: Garnish soup with coconut milk and cilantro. Enjoy!
