Step 1: Bake sweet potatoes at 400°F until tender.

Step 2: Cut sweet potatoes in half and scoop out the flesh.

Step 3: Sauté shallots and thyme in olive oil.

Step 4: Stir shallots into the sweet potatoes with the Fontina cheese, egg, butter, salt + pepper.

Step 5: Spoon the mixture into the potato shells and bake 20-25 minutes until puffed up.
