Step 1: Sear salmon in a nonstick skillet over medium-high heat. Remove from pan. 


Step 2: Sauté onion and bell pepper in the skillet. Stir in the Thai red curry paste.


Step 3: Add coconut milk, brown sugar, and fish sauce and simmer until thickened. Add lime juice. 


Step 4: Nestle the salmon back into the sauce and cook until done. 


Step 5: Garnish with cilantro or Thai basil. Serve salmon coconut curry with jasmine or brown rice.
