Step 1: Cook the quinoa according to package directions.

Step 2: To make the dressing, whisk olive oil, lemon juice, vinegar, mustard, garlic, and honey in a small bowl.

Step 3: Pour some dressing onto the kale and massage it into the leaves to soften them.

Step 4: Add quinoa, chickpeas, cucumber, red onion, feta cheese, almonds, and the rest of the dressing.
