Chocolate Almond Clusters (3 Ingredients)

These easy 3-Ingredient Chocolate Almond Clusters are the ultimate treat for chocolate lovers, combining the richness of dark chocolate, the crunch of almonds, and a hint of sea salt in every bite.

  • Line a baking sheet with parchment paper or wax paper.
  • Chop or break the chocolate into small pieces. Place the chocolate in a microwave-safe bowl. Microwave for 1-2 minutes, stirring every 30 seconds, until chocolate is melted and smooth.
  • Add the almonds to the bowl and stir until they are completely coated with chocolate.
  • Using a small cookie scoop or spoon, spoon clusters about 1 tablespoon in size onto the prepared baking sheet. Repeat until all of the mixture has been used.
  • Sprinkle each cluster with a little sea salt, if desired. You can top the clusters with other toppings like sprinkles, a drizzle of white chocolate, chopped nuts, or coconut flakes.
  • Allow the clusters to set in a cool area or speed up the process by placing them in the refrigerator until firm, about 30 minutes.
  • The chocolate almond clusters can be stored in an airtight container in the refrigerator for up to 2 weeks. Leave them out at room temperature for 10 minutes before serving so that they're not too hard when you bite into them. They can also be stored in the freezer for up to 3 months.

Notes

  • Use a good baking quality chocolate rather than chocolate chips for this recipe; I use a Ghiradelli 60% cacao baking bar.  Many brands of chocolate chips have stabilizers in them that help them hold their shape when baking so they don't melt as well. 
  • Use roasted almonds for amazing flavor. If you have raw almonds, you can roast them in the oven yourself. 
  • Mise en place (prep) all of your ingredients so that you can work quickly to make the clusters before the chocolate starts to harden.
