Dragonfruit Smoothie

Ingredients

  • ½ cup coconut water
  • 1 ½ cups frozen dragon fruit cubes
  • 1 cup frozen diced mango
  • 1 cup chopped pineapple
  • 1 banana, preferably frozen

Instructions

  • Place the coconut water in the blender. Add the dragon fruit, mango, pineapple, and banana. Blend on high speed until smooth. If the smoothie is very thick, you can use a tamper to push the ingredients down towards the blade get it to blend easier. Alternatively, you can stop the blender and scrape down the sides as needed.
  • Pour into two glasses and serve.

Notes

You can find frozen dragon fruit in cubes or smoothie packs in the freezer section of your grocery store- either one will work.
Use frozen fruit for best results- it will give this pitaya smoothie a creamy texture without watering it down. If using fresh fruit, you can add a few ice cubes to the blender. 
You can also turn this dragon fruit smoothie into a smoothie bowl. Use half the amount of coconut water to make the smoothie thicker. Then, transfer it to a bowl, top it with your favorite smoothie bowl toppings, and dig in with a spoon!
Optional add-ins:
  • To add a boost of protein, you can add a scoop of protein powder to your pitaya smoothie. 
  • You can add a tablespoon of ground flaxseed, chia seeds or hemp seeds for a boost of fiber, omega-3 fatty acids and phytonutrients.
  • Toss a handful of greens like baby spinach in for a boost of nutrients.
  • Add a squeeze of fresh lime juice for a pop of bright flavor.
  • You can substitute plant-based milk like almond milk or coconut milk as the base of the smoothie instead of of coconut water for a creamier consistency.
