Salad:
- 2 heads Romaine lettuce
- 1 English cucumber
- 2 large tomatoes or 4 small (can substitute grape or cherry tomatoes)
- 1 red bell pepper or 4 mini peppers
- ¼ red onion
- 1 can chickpeas
- ½ cup black olives, cut in half
- ½ cup feta cheese, crumbled
- 2 cups cooked chicken breast, chopped (optional)
Red Wine Vinaigrette:
- ¼ cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 2 teaspoons Dijon mustard
- 1 clove garlic
- ½ teaspoon dried oregano
- 1 teaspoon honey
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper
Chop the lettuce, cucumber, tomato, and onion into small pieces. Put them into a large salad bowl and add the chickpeas, olives, and feta cheese.
To make the vinaigrette, whisk olive oil, vinegar, mustard, garlic, honey, salt, and pepper together in a small bowl until smooth.
Drizzle the dressing onto the salad and toss to combine. Serve immediately.
