Step 1: Mix the panko, parmesan, dried spices, and olive oil together in a shallow dish.

Step 2: Butterfly the chicken breasts, slicing them into thin cutlets.

Step 3: Spread a thin layer of mayonnaise on the chicken.

Step 4: Dredge chicken in the breadcrumb mixture. Bake at 425°F for 8-10 minutes until done.
