Step 1: Purée falafel ingredients in a food processor.


Step 2: Roll the falafel mixture into balls, about 1 1/2 tablespoons each.


Step 3: Place falafel balls on a greased baking sheet and flatten them slightly. Brush with olive oil.


Step 4: Bake at 375°F for 25 minutes, flipping halfway through. Broil for 1-2 minutes until browned.


Step 4: Serve falafel in pita bread with fresh veggies and tahini yogurt sauce.
