Olive oil Vegetables: - Onion - Carrots - Bell peppers - Broccoli - Zucchini Garlic Salt Pepper

Step 1: Chop the vegetables into uniform pieces.

Step 2: Toss veggies with olive oil, salt, and pepper on baking sheets. Place in a 400°F oven.

Step 3: Roast until vegetables are crisp tender, 30-35 minutes, stirring them halfway through.

Step 4: If desired, sprinkle with sea salt, vinegar or grated parmesan cheese.
