Ingredients

  • 2 cups roughly chopped strawberries (about 8 ounces)
  • 1 cup plain yogurt
  • ½ cup milk, any type
  • 1 ½ tablespoons honey, sugar or other sweetener of your choice (adjust amount to taste)
  • 2 pinches cardamom
  • Optional: ice cubes

Instructions

  • Blend all ingredients together in a high-speed blender until smooth and frothy. Adjust sweetness to taste. Serve cold.

Notes

  • The amount of sweetener you need will depend on how sweet the strawberries are. Add more as needed to suit your taste.
  • Use cold ingredients so that the lassi is cold. Otherwise, you can chill the drink in the fridge before serving or add a few ice cubes to the blender (but this may water it down a little bit).
  • For a floral flavor, you can add a little rosewater to the lassi.
  • For a decadent treat, you can top the lassi with a dollop of whipped cream.
  • You can turn any leftover strawberry lassi into popsicles. Just pour it into popsicle molds and freeze until firm.
  • You can make this recipe vegan by using nondairy yogurt (like coconut yogurt) and nondairy milk.
