If you’re looking for the perfect drink to quench your thirst on a hot summer day, then my Strawberry Coconut Lassi is for you.
Lassi is a classic yogurt-based Indian drink that's served cold and can be either savory or sweet. I grew up drinking salted lassi in the summertime. My parents would make by blending yogurt with ground cumin, salt and ice.
Sweet lassi, on the other hand, is made by blending yogurt with sugar or fruit along with other flavorings like cardamom and rose water.
Mango lassi is very popular in Indian restaurants. It's made with yogurt and mango puree. You can make many different versions at home by blending yogurt with your favorite fruits.
Any type of berry or tropical fruit like papaya, pineapple or banana would work well in this recipe. You could even try making it with stone fruit like peaches, plums or nectarines.
I wanted to make a strawberry lassi because of the bounty of fresh strawberries at the market this time of year.
This is not a traditional lassi by any means. It's is not classically made with Greek yogurt but I love using Greek yogurt because it has a creamier texture than traditional yogurt as well as more protein and less carbs.
To give my drink a little bit of a unique spin, I also decided to add some light coconut milk. I find that it mellows out the tanginess of the Greek yogurt and rounds out the flavors nicely. You can adjust the amount of sweetener at the end, which will vary depending on the sweetness of the berries.

Can this be made ahead of time, or does it have to be served immediately?
Dr. Sonali Ruder says
Yes, you can make this ahead of time. Just give it a good stir right before you serve it in case it starts to separate a little. I hope you enjoy the recipe!
