Greek Zucchini Fritters

These delicious fritters taste like Greece in the summertime! They're packed with nutritious zucchini and bursting with flavor from fresh herbs and feta cheese.

- Zucchini - Salt - Scallions - Dill - Parsley - Eggs - Feta cheese - Flour - Baking powder - Breadcrumbs - Olive oil

Cook Time: 15 Min

Ingredients

Step 1

Grate the zucchini.  Grate fresh zucchini on a box grater.

Step 2

Salt the zucchini. Sprinkle salt on the zucchini and let it rest for 20 minutes.  Squeeze out all the liquid.

Mix the ingredients together. Mix the zucchini with the remaining ingredients in a bowl.

Step 4

Cook the fritters. Cook the fritters in a skillet 3-4 minutes until golden brown.

Step 5

Flip. Flip the fritters and cook 2-3 minutes until golden brown on the other side.

Step 6

Serve. Serve fritters hot with a dollop of tzatziki or plain Greek yogurt.
