Looking for a quick, protein-packed breakfast to fuel your busy mornings? These oven-baked egg bites are the perfect solution and are packed with 19 grams of protein per serving!
If you've ever tried Starbucks' popular sous vide egg bites, you know they're incredibly yummy. They're rich and creamy with a velvety texture that makes them so satisfying. On their website, they describe them as "Applewood-smoked bacon and aged Gruyère Monterey Jack cheeses folded into cage-free eggs and cooked using the French "sous vide" technique to create a velvety texture that's full of flavor."
My homemade version is inspired by those delicious bites. But my egg bites are much easier to make, and don't need a sous vide machine. Instead, they're baked in the oven. Just like the bacon & Gruyère egg bites at Starbucks, these fluffy egg bites are loaded with savory cheese and flecks of crispy bacon in every bite.
These tasty egg bites a great option for meal prep and store well in the fridge. They're perfect for quick, on-the-go breakfasts throughout the week. You can also pack them in your kids’ lunchboxes or serve them as a healthy after-school snack.

The Secret to Perfect Egg Bites
What's the secret ingredient that makes these egg bites incredibly fluffy and creamy? Cottage cheese! If you look at the nutrition information on the Starbucks website for their bacon & Gruyère egg bites, cottage cheese is listed as the first ingredient.
Blending cottage cheese into the egg mixture gives a velvety, smooth texture with every bite. It also adds a nice boost of protein. Check out some of my other cottage cheese recipes.
The egg bites at Starbucks are sous vide. Sous vide cooking is a technique that involves sealing food in a plastic bag or jar and cooking it slowly in a water bath at a precise temperature, often using an immersion circulator. This method produces ultra-creamy egg bites because it prevents overcooking.
However, since most of us don't have sous vide machines, I bake my cottage cheese egg bites in the oven instead. The trick is to use a water bath to keep the eggs soft and creamy. This is a baking technique commonly used for delicate dishes like custards and cheesecake.
To create a water bath, simply place your muffin pan on a baking sheet and pour hot water onto the baking sheet around the pan. The water helps maintain a consistent, moist heat that prevents overcooking or cracking.
By baking the egg bites in a water bath in your oven, you can mimic the moist environment of sous vide cooking. This will give you perfectly tender, velvety egg bites.

- Eggs- I use large eggs
- Cottage cheese- The secret ingredient for fluffy, velvety egg bites. Full-fat (4%) cottage cheese will give the creamiest texture but you can also use reduced fat.
- Shredded cheese- Starbucks uses a combination of Gruyere and Monterey Jack, but you can use any combination of cheeses like cheddar, fontina, or mozzarella.
- Cornstarch- adding cornstarch to the egg mixture helps prevent the egg bites from getting soggy.
- Add-ins- instead of bacon, you customize your egg bites with other ingredients like spinach, mushrooms, sun-dried tomatoes, bell pepper, scallions, or sausage. You can also add a dash of hot sauce.

I am planning on making these. I just bought a 12 ct. muffin pan. I plan on doing chopped bacon, chopped bellpeppers, chopped jalapeno peppers, finely chopped spinach & cheese in these. I also plan on freezing some to keep in the freezer = meal prep. We are trying to eat out less and also eat healthier! Thanks for the recipe & suggestions!
