When it comes to breakfast, getting a good amount of protein is key to keeping you fueled and satisfied until your next meal. As a doctor, I aim for 30 grams of protein in my morning meal to kickstart my metabolism and keep me going strong all morning long.
Some of my favorite protein-packed breakfast dishes are my high protein overnight oats, healthy breakfast burritos, and 3-ingredient banana protein pancakes. When I'm in a rush, I make my protein coffee or coffee protein shake to take on the go.

If you're not a fan of the taste or texture of cottage cheese, don't worry! The curds melt into the eggs as they cook. And you can barely taste the cottage cheese in this dish except for a mild cheesy flavor.

Cottage cheese is high in protein. While eggs are already a great source of protein, providing 6-7 grams of protein per egg, adding cottage cheese takes this dish to the next level, upping the protein to 20 grams. In addition to protein, cottage cheese is rich in essential nutrients like calcium, phosphorus, selenium, and B vitamins.

- Eggs- I use whole eggs in this recipe but you could also use a combination of eggs and egg whites.
- Cottage cheese- you can use low fat, full fat or fat free cottage cheese; I typically use this low-fat cottage cheese. I prefer to use small curd cottage cheese in this recipe.
- Salt and black pepper- I just use a pinch of each since cottage cheese already has a good amount of sodium.
- Optional add-ins: you can stir in veggies like baby spinach, sliced mushrooms, bell peppers or tomatoes or herbs, spices, hot sauce, etc.
How To Make Cottage Cheese Scrambled Eggs Step-By-Step

- Step 1- Add eggs, cottage cheese, salt, pepper and any additional seasonings to a medium bowl.
- Step 2- Whisk it all together.
- Step 3- Heat a medium nonstick skillet over medium-low heat and spray with olive oil, avocado oil or cooking spray. Once warm, add the egg mixture to the skillet.
- Step 4- Using a silicone spatula, slowly push the eggs towards the center of the pan as the bottom starts to set. Continue to do this until large curds form, and eggs are cooked but still soft and creamy. Transfer eggs to a plate and serve immediately. Garnish with fresh herbs like chives or basil, if desired.

You can use any brand of cottage cheese that you like. You can use reduced fat, full fat or fat free cottage cheese. I recommend using small curd cottage cheese in this dish rather than large curd.
Adding cottage cheese to scrambled eggs boosts the protein content and gives the eggs a fluffy, creamy texture.
Some brands of cottage cheese have a higher moisture content and can make your eggs watery. I like Good Culture cottage cheese, which is not too watery.
