- Chicken- I use boneless, skinless chicken breast but you can also use boneless, skinless chicken thighs
- Mango- you can use any sweet, ripe mango. I typically use Ataulfo mangos also known as honey mango
- Avocado- I like to use Hass avocados because of their rich flavor and creamy texture

- Step 1- Sprinkle chili powder and salt on the surface of the meat.
- Step 2- Grill the chicken on a grill or grill pan over medium-high heat for 4-5 minutes on each side, until cooked to an internal temperature of 165°F as checked with a meat thermometer.
- Step 3- Mix the mango, avocado, onion, jalapeño, cilantro, and fresh lime juice together in a medium bowl. Season the salsa with salt and black pepper.
- Step 4- Spoon the mango avocado salsa on top of the chicken. Serve with lime wedges on the side.

Grilled Chicken:
- 4 boneless, skinless chicken breasts
- 2 teaspoons chili powder
- ¼ teaspoon kosher salt
Mango Avocado Salsa:
- 1 cup diced mango
- 1 cup diced Haas avocado,
- ¼ cup finely chopped red onion
- 1 tablespoon finely chopped jalapeno pepper
- 2 tablespoons chopped cilantro
- 1 tablespoon lime juice
- Kosher salt and black pepper
- Oil for brushing the grill
Instructions
- Sprinkle the chili powder and salt evenly over the chicken breasts, patting it in so that it adheres. Heat a grill or grill pan over medium high heat. Brush with oil. Grill the chicken, about 4-5 minutes on each side, until cooked through to an internal temperature of 165°F. Remove from grill.
- To make the salsa, mix the mango, avocado, onion, jalapeno, cilantro, and lime juice together in a medium bowl. Season salsa to taste with a pinch of salt and pepper.
- Arrange chicken on a serving platter and top with the mango salsa.
